For 3-4 persons
Ingredients :
- Half a zucchini
- Half a cucumber
- A little bit of water
- 4 table spoons of olive oil
- Half a lemon
- Salt and pepper, to taste
- A pinch of piment d’espelette
- A lot of mint!
Preparation :
1. Peel off the skin of both your zucchini and cucumber
2. Cut them in big chunks
3. Add to the blender, as well the water, olive oil, lemon, S&P, piment, and mint leaves
4. Mix until you obtain the consistency of a soup
5. Depending on your taste, add more salt and pepper, lemon, and piment d’espelette
6. Top of with a lot of crumbs of our Rosemary crackers
7. 💡you can also add some yoghurt, either in the mix or as a topping. Some spring onions would also taste yummy!
